Cranberry Orange Muffins


Ingredients:

½ cup margarine
½ cup white sugar
¼ cup brown sugar
2 eggs
1 ¾ cup all- purpose flour
½ tsp baking soda
1 tsp baking powder
½ tsp salt
½ tsp vanilla
1 cup yogurt
Zest of one orange
4 tablespoons of orange juice
1 cup fresh, frozen, or dried cranberries

Directions:



Preheat oven to 350 degrees F, or 175 degrees C.
In a small bowl, mix flour, salt, baking powder, and baking soda. Put aside.
Grease muffin tins, using a cooking spray or some margarine, or line with cupcake liners.
In a medium bowl, cream together margarine, sugar, and eggs. Then, add vanilla to the mixture. Beat until you get a very creamy mixture (3-4 minutes). Add the zest of one orange and orange juice at the same time. After they get mixed very well, gradually, add flour and continue mixing. Then, add yogurt. Don’t overbeat. In the end, add berries. Fill the muffin tins ¾ full. Bake 30 minutes, or until brown.

Strawberry Melon Pineapple Smoothie




(Original recipe makes 2 servings)

Ingredients:

½ cup fresh, or frozen strawberries
½ cup fresh pineapple chunk
½ cup fresh chopped melon (honeydew, or Cantaloupe)
4 tablespoons yogurt
¾ cup milk
¾ cup ice cubes


Directions:

Put all the ingredients in the blender. Blend until smooth. Pour into a glass and enjoy.

My Notes

  • This easy smoothie has a perfect texture and a great fruit flavor. It is not too thick or thin and has a natural sweetness.
  • If like to make it sweeter, add some honey to your mixture.
